Cost of replacement rotors if I take the car to any high performance driving events.

I'm trying to convert the brake system on my '13 GTS with PCCB to just the normal steel rotors and calipers. Are all of the Panamera calipers directly interchangeable?
Can all brake calipers interchange? 4S to Turbo to Turbo S?

Reading these types of topics are really scaring me off from using ceramic rotors on the track, so if I can convert for ~$2k, I would rather go that method and keep the value in my ceramic set.
