makeover for my99 cab (suggestions needed)

I'm doing a complete makeover for my99 cab (Yes, I'm crazy) I'm pretty handy, but I have NOT done any interior swap before. Is this something I have to take to an auto interior shop for? BTW, I'm talking about the whole thing (dash, seats, console, steering wheels, panels, etc.)

I have also purchased a set of wheels for this make over, but I ran into a little issue. The rear wheels are 20x11s (w/ 295/25-20 tires) Even at this size, the wheels sit inside of the rear fenders at around 2.5" I'm thinking about getting spacers for them, but some people have told me that spacers are very dangerous. Is that true?

As always, I really appreciate all the helps & suggestions.

No issues with spacers, they are quite common but, 20 inch tires on a 99 maybe. IMO there are no benefits but it’s been suggested by some that the 99 wasn’t designed for 20’s and it may cause problems with the suspension. GL
