scratch / chip repair question

I know there have been numerous posts about using a DA orbital machine with a medium to fine polish to remove light surface scratches. How do you safely remove a deeper scratch or stone chip?

Is it as simple as cleaning the area / clay bar, filling the chip or scratch (sparingly) with touch up paint, and then using the buffer with a medium cut polish to even the touch up paint with the surrounding areas, then using the fine polish to remove the swirl left by the medium polish? I am a relative novice to this, but the above process "sounds" like it should work. Can someone let me know if this will work or if I am way off base with my thinking on this.

Of course, I will be trying this first on one of my other cars :)
