2014 911S Carrera Cabriolet. Just had shop do an oil change.  I got home and checked the oil level on the dash display.  It showed it was at the very minimum.  I called shop.  They stated they did indeed add 8 qts of oil as vehicle calls for.  They also said they see a fair amount of problems with the electronic oil dipstick.  I don't know what to do.  Do I trust that they did add the right amount?  Do I add oil and possibly over fill?  I have not had any issues with the dipstick previously.  Any recommendations?

These engines are actually happier running slightly below the full level.  Add about 1/3 of a quart of oil, let the car sit for a bit and check it again.  We generally fill customer cars to around 1/2 quart below full cold.

The dash display will always tell you the truth, unlike many shops.

I had my oil level sensor go but when it went it just said nothing. If you are really concerned do as JFP suggests or dump all the oil out into something you can measure it with. If you change the sensor you have to change empty the oil anyway.

According to my 2015 Porsche Owner's Manual, "The difference between the minimum and maximum marks (those two white lines in your pic) on the segment display is approx. 1.8 quarts (1.7 liters)". If we assume the gauge is linear, then 0.45 quarts per segment. So adding a quart should give you an extra two segments as you mentioned.
